Ingredients
- salmon fillet2 fillets
- olive oil1 1/2 tbsp
- soy sauce3 tbsp
- garlic · minced3 cloves
- broccoli · cut into florets3 stalks
- lemon · for serving1 lemon
- fresh ginger · grated7 slices
Steps
- 1Set the oven to 400°F and line a rimmed baking sheet with foil. Cut the broccoli into small florets, mince the ginger and garlic, and slice the lemon into wedges.
- 2In a small bowl, whisk soy sauce with the minced ginger, minced garlic, a drizzle of olive oil, and a squeeze of lemon juice until smooth.
- 3Place the salmon fillet in the center of the sheet pan and surround the broccoli florets. Drizzle a little olive oil over the broccoli and toss lightly to coat.
- 4Pour about half of the ginger soy mixture over the salmon, spreading gently to coat the top.
- 5Slide the tray onto the middle oven rack and roast for 12 to 15 minutes, until the salmon flakes and the broccoli is tender with slightly browned edges.
- 6Brush the salmon with the remaining ginger soy mixture and continue roasting for 3 to 5 minutes, until the glaze looks set and lightly shiny on the fish.
- 7Remove the tray from the oven and let the salmon rest for 3 minutes so the juices settle, then place a few broccoli florets on the plate and serve with lemon wedges.
